I brine and smoke Amberjack and Tuna. They're tasty, but Jack Crevalle and Bonito have some amazing flavour.

DP GF rack spacing

I just pulled the trigger on these plans, and wanted to know if there's any disadvantage to adding additional channels above each of the channels in the drawing, giving an optional 4" spacing between racks, instead of the regular 5" space. This would allow me to squeeze one more rack in for ribs :D ...

1000 odd lbs is nothing to ocean freight to Trini.

The cost is gonna be the clincher.

Welcome to the crew! I see these guys have got you some awesome info. Just so you know you can build your smoker all sorts of ways with multiple fire boxes for various types of cooking. The water pan is also a option not at all required. I have a FB under my WC/CC and an GF burner setup on it also....
