Re: Black soot? All over food and smoker.

The calculator says your recommended half moon throat diameter is 8.69. Your quadrant dimension needs to be half that, 4.35. A half moon is half of a circle. The half moon area of a 8.69 diamter circle is 30.13 sq inches. My half moon has a overall larger diameter than 8.69, it's 14.25 at the top o...

Re: Black soot? All over food and smoker.

Looking at the numbers in the smokerbuilder pitcalc, you have a slightly undersized FB at 98%. The throat comes out around the same at 30insq, the height is correct around 3in but check the top width of the half moon which should be 14.4in. It could be down to fire management - are you getting thic...

You need to post all your dimensions. That throat looks awful small.
I have drawings at work. I'm sure I just went with the throat calculator found online.

Gotta be the stack damper, most guys say to leave it wide open. Control your temps with the firebox vents and the size of the fire.
My stack doesn't have a damper. I'm beginning to wonder if it's too small/restrictive.

Black soot? All over food and smoker.

I have a reverse flow that I built using help from here. I've been struggling with the food color. I cooked a couple butts the other day and there is this charcoal/soot like appearance to it. It rubs off on my hands and it's black. Doesn't taste odd though. It's looks like, to me, if the flames in t...

Made a lonestar knock off firebasket. Never weleded before. The welds look terrible (not straight in the corners) but its functional.

Re: 1st build (20 x 36) with LOTS of help.

Threw on some paint. The lid had lots of grinder marks in it so I had to spend a lot of time sanding it. Not perfect, but much better than the 1st coat of paint. The firebox plates had alot if deep groves on them (used steel from some sort of farm equipment). I ground and sanded them down a bit, but...

Re: 1st build (20 x 36) with LOTS of help.

Brought her home over the weekend and fired it up. Have to sand it some more yet and then paint it. I've read some people just oil the outside of their firebox rather than pain it. Thoughts on that?

We weighed it and it came in at 422#'s.

Re: Having problems getting smoker to temp

20200411_173452.jpg Thanks! I burned it out yesterday with my fire grate in. I saw a video of someone suggesting not using a fire grate and burning right on bottom of FB. His reasoning was the coals do not fall through grate. That didnt work for me. I put the grate back in today and now look. Nice ...

Having problems getting smoker to temp

20200411_162504.jpg I started with a full chimney of charcoal. Added 2 splits worth of wood (chunks of oak). The smoker would settle in at 180. I have my firebox vents wide open and it just won't get hotter. Link to BBQ Pit Calculator On thing, I have a 2" drain pipe welded to bottom of heat plate....

Re: 1st build (20 x 36) with LOTS of help.

After looking at these pictures I realized - I better get in there and sand off all that paint on the baffle plate before the end caps get welded into place. Luckily, the painted side ended up on the top.

1st build (20 x 36) with LOTS of help.

I got my hands on a 20" diameter x 36" steel tube. It sat around for months just begging to be turned into a smoker. I then found a good deal on 1/4" steel plate to make the firebox, baffle plate and end caps from. I hacked my way trying to cut the 1/4" plate into weldable parts using a plasma cutte...

Rack spacing in 20" diameter.

I'm putting the bottom rack right at bottom door height. I've got just under 11" from there to the top of the smoker. Do I want more room between top rack and top of smoker? Or more room from bottom rack to top rack? See attached.

Thoughts on doors and racks?

I've seen the bottom rack level with the mid point of the smoke chamber with slide out. I've also seen the bottom rack below the door and split in 2 racks for removal. And only the top rack could slide out as it was also narrower. I've seen the doors start below top center a few inches and go below ...
