Re: First UDS

That UDS is my first build. We've used it several times. Works especially well for smoking brisket. I have enjoyed the UDS very much, but it's time to move on to something, well... bigger. I'm starting a build using a 90 gallon air compressor tank used as a water tank from an old concrete truck. The...

Re: First UDS

I have really enjoyed this UDS. It works so well. I've cooked pork ribs several times and Labor Day 2016 I smoked my first brisket. I have 4 black pipe nipples at the bottom. Three with caps and 1 with a ball valve. The lid has three clamps and I use 3 pair of vise grips between the clamps to give m...

Frank, This build was discontinued. You can remove it if you like. I still enjoy the UDS though.

Re: Pork Shoulder on UDS

My buddy Keith from church stopped by at 4 pm Saturday to see how the uds was working out. It's a good thing he did because the internal temp was topping 200. I was going to wait another hour. We pulled the roast off and cut us off a sampler while the rest rested. Keith said it was the best pulled p...

Re: Greetings from Muskogee, OK

I have a little Lincoln 100 that worked fine building my UDS. You can also build a UDS without welding. Franks dvd shows how. A UDS will satisfy your passion until you get the rig of your dreams built. If the wife keeps complaining just look her in the eyes and say "I'm doing it for you Sweetheart"....

Re: Pork Shoulder on UDS

I think you're absolutely right Tom. My problem is that I want to sleep at night. I'm just funny that way. Also, things never work out that well for me. If I cut it too close on time I know I'll regret it. I'm thinking 1 1/2 hours per pound or about 15 hours of cooking time. When ever it get's done,...

Pork Shoulder on UDS

Trying my first pork butt (9.9 Lbs) on my uds. The blocks are to hold the lid down because it keeps wanting to spring up. It's Friday 11/11/11. My plan is to mustard, rub and marinade the roast until Saturday am, cook all day Saturday, rest until time to eat Sunday evening. My plan is to wrap it up ...

Re: Makin burgers tonight

Looks good Frank. Those sweet potato fries are good. They're also good cooked in the oil at a fish fry as slices. On your burgers, did you cook them on a smoker? I'm trying some burders on the UDS today for lunch.

Re: First UDS

OK First try at cooking on the UDS. I'm trying a Butt Roast today. Nothing special on the seasoning just salt and pepper, soaked apple chips. Temp is doing better today. http://i1210.photobucket.com/albums/cc418/jwrobnz/WP_000127.jpg I have a small digital thermometer stuck in a small hole and propp...

Re: First UDS

Off Road Capable. That's funny Tom. That's the wagon my boys used to ride down the hill in our yard. I did the cure/test run today. The top didn't seal as tight as I thought it would. I put concrete blocks on top to hold the lid down. Maybe some clips around the edge would work. We got a good cure a...

Re: First UDS

we're gettin' there. Here's a pic of the charcoal basket and the UDS. Tom I agree that the flat lid would work better since it would probably seal tighter. From what I understand, the tighter these things are sealed, the better they work. I have to work a little to get the lid down, but I think it w...

Re: First UDS

Thank you Tom! I'll get the rest of the parts and finish this week. I'm anxious. I'll go ahead and plan toward two grates eventhough I only have the flat lid for now. I want to find a weber top later. I used to have a little brinkman smoker. I rigged it to have a rotisserie. The chickens that came o...

Re: First UDS

The Burnout. I ground of the edge, like you said Tom and ended up with a very nice fitting lid. I shouldn't have any trouble with it sealing. Watch creating sharp edges though. When I got done with the grind, I tipped the whole thing over to drain the soapy water out and the lid just popped right of...

Hello from Pike County Illinois

I'm from Pike County IL. We have dead white tail deer along the roads here like the South has armadillos. I went to school at Rolla, Mo for 3 years from '85 to '88. I love BBQ and I think it would be really fun to build and cook on a smoker. This is such a great site. I am really enjoying this site....

First UDS

I found a drum today. I'm not sure what to think of it. The price was right, but it had linseed oil in it. There is a warning on the outside of it that warns of explosive vapors. It's a closed top type of drum. I'm thinking of filling it with soapy water to the brim before I cut the top bead, then a...

Labor Day Weekend Butt Roast on the Weber Genesis didn't turn out as well as I would like. Starting to wonder about a UDS to tide me over until the trailer cooker gets done.

Frank, man. That's just mean taking a picture of a rib that has a bite out of it. That's just mean. I can taste those ribs and feel the tenderness right through the picture. So funny. Cool!

Re: My First Build

I read in one of the other articles that the firebox should be about 30% of the cooking chamber in volume. My idea right now is to have the bottom plate be 6 to 8 inches above the bottom of the main body and a firebox about 3 feet long and 18 inches square across the back of the trailer and supporte...
