I've done the aluminum before on my doors of my previous smokers, each time I have just used the high temp RTV sealant to glue them on. Haven't had any issues so far, in fact have trailered them at 70 mph and they haven't ripped off. So I hope they continue to hold up. Saved me a bunch of welding and grinding (cost of alum vs time in welding/grinding) by just gluing them.
