I have plans for this smoker but getting offers to sell,, and some tempting ones too.
One of the chefs,, was asking about the flow of smoke around the baffle dam,,,
It looks a like it could disrupt the smoke flow as it enters the first lower race. Any Comments?

I would have to say considering that heat rises, the dam will not effect the air flow at all. I try to ask folks to imagine if your were turned upside down and you poured water in the fire box. This is how heat/smoke flows through the pit.

Lots of work done the past couple of weeks
but couldn't wait

Got most of the checklist done,,,,
couple of things to finish but couldn't wait.
counterweights and couple of holes in the top to patch.
doors need some work 1/4 inch gap at the bottom or seals
plans to add the cabinet this winter,,, its time for Cooking.

wow,,, 40 % damper and 3 inches on each of the slides and its tough to get it to budge from 250 degrees,,,, hope this sweet spot holds true

got the counterweights in ,,they were hardened shaft so we strapped and pinned them.

This is a banner year for the projects,,,
Sawmill is finished, Smoker is done, front yard almost landscaped

Alot of this I owe to my younger brother Eric.
just over two months ago my closest friend John,,, chose the easy way out.
For 20+ years, John and I talked twice a day. I knew he was in awful shape but thought he would pull out.

Eric and I have had a difficult relationship for many years and for many reasons.
Yet in my time of need has worked hard to step up and support me in recovery from this loss.
Thank you for the project we have shared. It has created a terrific memory and reinforced a bond between brothers.

almost done with the next project,,, went quick and overlapped the beast
had issues with the pig spit,,,, ordered a motored rotisserie and the spit was too short
bought a piece of ss tubing and 3 inch of solid to make ends,finish in another week

Doing my first build, a 500 gallon tank. Any numbers you can post would be real helpful. I have calculated on Feldons. but I'm not seeing any way to calculate the Baffle plate location, size, height off the bottom of the tank. I see the plate should be a few inches above the top of the FB to CC opening but the cubic inches under the plate, is that a critical number? and the square inches of opening at the end of the plate? thank you in advance.

awesome, as far as the plans numbers, can't really post them here. On the feldons calc, I don't know if you are told the square inches for the throat opening. If not try our Pit calc found at BBQPitCalc.com. The Throat opening number will be there in the results. Our numbers can be a little different on some pits but take the throat number and divide by 50% or 75% for the BP gap (should be smaller than your throat opening. I tend to run a little tighter than that for mine but that is a good starting point. Bottom of the baffle plate should be 1 inch or so higher than the top of the throat opening.

Went to buy what was advertised as a 250 propane tank. It wasn't, it's 500! So all the calculations I did are out the window. A 10 ft long smoker is a bit much. So.... I'm considering cutting off about 30+/_ inches and using that as the firebox. Is this a good or bad idea? With a 37" circumference I'm concerned about how low the firebox will hang down below the smoker. I'm putting it on a trailer and wondering once it's on the trailer, on a support frame, that the upper cooking racks will be like 6 feet off the ground. Would a rectangular firebox that isn't as tall be a better way to go? What is the height of the firebox on This Beast?

I’m not convinced your cutoff would be the best bet for a firebox. I think you will be much happier building one out of plate to meet the size the calculator gives you.

Thank you that helps. One more question about the baffle plate. I will be installing a drain tub at the end of the baffle plate with a ball valve. Does the baffle plate need to be installed so it's sloped slightly towards the drain? and if so how much is enough ?Also it seems logical that with a drain, the baffle plate would require a short vertical end cap so the grease doesn't run down into the bottom if the smoker.

The BP should be level with a grease dam on the end.
