I would say you got a good idea of what to expect from your new rig. Nice using a stick burner the smoke ring almost goes all the way through the rib. I cooked some for my mother in law and took them to her and left. She thought they were under cooked because of the pink smoke ring and cooked them another 3 hours in the oven trying to get rid of it. Some people need more guidance. LoL

Thanks again, everyone. Going to put this thread to bed, with one last Q view. Did a brisket, and thanks to beginner's luck, and a good piece of meat....it was incredibly good! Probably one of the best briskets we've eaten. While it was small at 10 pounds, it came from a local farm, required zero trimming, and was just plain delicious! Cooked it to the stall, then wrapped in pink paper till it was 203. Wrapped the whole works in foil and put it in a cooler until dinner time. Grilled some corn for a side. Simple is good! Time to celebrate with a couple of fingers of Knob Creek, and call it a day!

Great results on the brisket...it can be difficult to get it right. I have to trim mine, but also cut it pretty close to zero fat cap.

By the way, what kind of corn is that? I’ve never seen it here in the southwest with those white ends....lol.
