I just seen this thread for the first time, I read every comment. The build is amazing, looks great. You are obviously very talented. Thanks for sharing seriously thanks.
Man, that thing is beyond awesome. As RC said, be a shame to use it and make it dirty...but that the same time it would be so cool to have tucker from that work of art.
Learning generally boils down to "Repetition or the avoidance of pain", some people learn by doing, some by watching and some just have to pee on the electric fence.

Have a question on rod vs expanded meteal for grates . I have to buy a full sheet of stainless expanded at a cost of $ 400.00 . Not sure if one or the othere works better for smoking ?
Either will work fine. You don't have to have to use stainless, regular mild steel will last a long time once it's seasoned but I don't doubt that you'll go the extra mile seeing all of the details that you've put into this build.
Stainless is overkill. It won’t stay shiny and new so no need to spend the extra money in my opinion. I’ve had standard carbon steel flat expanded grates on mine and use it pretty hard. They are 3 and 1/2 years old and still look and work great with absolutely no sign of wear on them.
