Looks pretty tasty. Wondering why you score the meat? I would be concerned with the increased surface area letting it dry out.

Thank! The meat is really great! Moisture in moderation.
It was marinated for 5 days, then dried for 12 hours.
It was smoked for 4 hours at a temperature of 110 degrees Celsius.
