Got some of the details done in the WC. I made the dam around the inlets and got the drain in. I got the dampers and stacks on the inside top piece. It should come together quick tomorrow.

Switching to some detail work. Temp gauge mounts that allow for pass through on door. Need to weld them on and trim inside.

I designed the fixed top shelf in the cooking chamber to hold 6-7 of the aluminum steam pans and the warming cabinet will hold 20 pans at capacity. A lot of my dimensions were calculated based on these 75 cent pans!!! I should be able to cook smoked beans, green beans, mac n cheese and corn bread all at once while cooking the meat!!!

Just curious what your end goal is for the cooker. Are you doing catering, restaurant or just building it for fun?

This is a great build! Love the stack dampers!

I've always thought that on one end of the design process are the disposable aluminum pans that I use all the time and on the other end is what will fit in the back of my Jeep. Seems like the best way to design - the food fits and so does the smoker… :D

I am trying to get this done to cook for a large event at the end of August where there are over 100,000 people over 4 days and 9 food vendors. The event is 7 miles from my house. This thing will last forever so who knows what the future holds beyond this.

More detail work. I don't like the spring handles as they hold rub and grease and are hard to clean. These will be easy to clean.

You are pushing yourself through a lot of work to cook that first time at that date. Good luck! You can do it.

The warming cabinet is welded. Did some grinding on it. Doors are ready to go on. I did a way better job on my edges over my previous smokers. You can't even tell there were welds there.

Got some detail work done. I need to make dampers and then racks and log racks. Then time to test it out.
