Got hung up on the handles last night. Ended up ordering a door latch from kck for the fb door. I'm guessing the vinyl red handle won't last long though.

The baffle plate seems like it will be fun to do. I hope it will fit through the door.

Do you guys weld standoffs in the CC to hold up the BP while you weld it in?

When you cut the baffle plate to the right width it will rest in at the appropriate height no need to use standoffs.
As far as getting the length to fit, you'll probably save apt of headaches if you split it into 2 pieces across the width then butt then together.

How do you guys run your temp probes? I was thinking about making some kind of port. Maybe on the stack. The FB might melt my iGrill though.

I could do something on the CC, but that would need to be a tighter connection I would think.

Or am I over thinking it and just run em through the door?

You just run it through the cook chamber door… If it's probe thermometer with a face gauge… If you're talking about a maverick with a wire or something like that that's a little different…

2 probes on 3 foot wire with a 3.5mm headphone type jack on the end.

The wire has a stainless braided shield.

I drill a 1/4 in hole near where I will be setting my gauge and run the wires thru that hole. When not in use I put a 1/4 in bolt in the hole. I just keep it simple.
