Warming Cabinet Questions

Post by noXcuse » December 24th, 2013, 3:39 pm

Here in the next few months, I will start a new reverse flow trailer build. I'm acquiring a 150 gallon propane tank, and I'm considering putting a warming cabinet on it. I have a couple questions about this. I've only seen a few warming cabinets on the internet. Never seen one in person before, so please bare with me.

Are they actually "warming cabinets", as in just uses radiant heat from the firebox to keep food warm? Or, is there a hole cut in the top of the firebox that lets smoke into it, with a baffle plate on the bottom and a chimney on top? If so, does it need a damper to control the heat/smoke?

If smoke does pass smoke through it, does the volume of it need to be added in with the volume of the cook chamber, to plug into the pit calculator to get the firebox size?

My last question. If they are used as a "cabinet smoker", can the temp in there get low enough to cold smoke?

Thanks, Chris.

yes, I do put an inlet from the FB or CC and a smoke stack on them. I use a damper so I can control it.Baffle plate is not necessary.

no

Thanks, Chris.
you will have better luck in the colder temps but if you build a small fire in the FB you will be fine.

Awesome! Thanks for the quick response.

What kind of temps do you normally see in yours? Assuming that you're actually cooking something else in the CC at the same time.

if i'm cooking at 225 to 250 in the CC i usually can maintain less than 200* in the warming cabinet with the damper closed. I can get up to 400 easy with the damper between the FB and WC. if the damper is between the CC and WC it is harder to get that hot

Hijack!!!!! Does it matter how tall the WC is. My FB is going to be 26w X 22l x 20h. I plan on making the FB and WC as one piece. What about a stack. How do I figure out how big to make it.

The WC, for all intents and purposes, is the chimney. A short stack that can be damped is all that's required.

In my perfect world, I would build a RF large enough to do whole hog and use the warming cabinet as a vertical smoker for those times (mostly) when smaller cooks will do.

lol. Hijack away, my friend. I'm sure any questions anyone else will have about warming cabinets will eventually help me with my build.

Can't think of a reason that would limit or dictate the size other than it being a large heat sink connected to the FB.

Petes Meat is the metric meat guy I think. :)
