filling the baffle plate full with water cn cause you to have large swigs in temperature. I prefer to not use water directly on the baffle plate. instead like they said use a smaller pan and fill it if you want to have water in the cook chamber
Good Idea about the pans. I did a burn yesterday, after the smoker was out in the rain for a week. The water from the humid air condensing on the inside of the lid and running out onto the shelf made a heck of a mess, I can imagine what it would be like with the tray full of water. I may have to weld a small bead of maybe a 1/4"X1/2" strap along the inside of the lid just above the opening so the water drips off inside rather than run off the door and down the outside of the tank.
This is what I do , it directs all the grease down to the BP instead of running out the door whenever you open it. It's 1/8''x1'' flat bar that I cut as wide as possible based on my door opening and I weld it on an angle to where the edge of the flat bar is about 1/2'' inside the CC.
I found a piece of 1/4"X1" plate and welded that onto the inside of the door. It angles down at about 30 degrees and is inside the tank about 3/4". I havent tried it yet but I hope the water will run down the lid and drip off into the tank rather than run down the outside of the tank below the door.
And there was a bonus. After I burned out the thing and had a few practice burns the door was not seated well. It fit tight all the way around before I heated it up but started to lift in the bottom left corner. I suppose all the heat was relieving some stresses from rolling and shaping the tank. I thought I was going to have to attach some kind of latches to get the door to fit tight. After welding on the drip bar, the lid fit tight once again.
