So dumb question, how much effect does the wind have on maintaining temp? Ran a burnout/trial on just the FB and CC and the temp is all over, 200-290 and seams to go through a lot of charcoal. But it is howling at about 25 mph. Would that wind cause so this?

I'm not sure but do you have a stack and sealed up door? I also have to wonder why you built this type of smoker to use charcoal in it. This is what is commonly known as a stick burner. It would take some fuel and time to get up to temp then about a spit or two every hour.

Ya, I plan to use wood but just wanted to do a quick heat up of everything and I had the charcoal here. I do have the stack on and to length but I do not have the doors sealed yet. That's probably the biggest problem. I'll let this fire go out and then tomorrow get the doors sealed up. Thanks rod crafter.
