The moment of truth!!!

So far so good.

I am not going to have it on a permanent trailer until after fair is over. I want to use as much time as I have available to become familiar with learning what is does and doesn't like to do.

I had no trouble hitting 300°

I tried to see how steady of a temp I could hold. I was shooting for 275° I seasoned it with cooking oil before starting the fire. I have a little over four weeks to get it dialed in for fair. Tomorrow night's dinner will be my first smoke on it. I already love the way is smells and it hasn't even had any meat inside of it yet.

The test results are in! I ran my first smoke this weekend. They say a picture is worth a thousand words, so I will shut up.

A quick update. I still have some work to do on the smoker, but I got to use it at our county fair. I smoked 700 lbs. of tri tip during the five days of fair. I used the warming cabinet to heat the beans that go with our meal.

I am planning on mounting it on a trailer and finishing up the latches on the doors and the shelving in the warming cabinet now that school is back in session.
