Been out of town working and I'm back for the weekend.
Not truly finished with the smoker but was hoping to get it lit and test it out.
Can anyone give me an estimate about how many sticks it will take to keep up to temp for a couple briskets and a couple of shoulders.


I'm humble enough to know I can't do everything but, I'm stubborn enough to try to until I can!

It's hard to say for sure but on average I burn 2 fist size splits about 12''-14'' long every 45-75 minutes or so once it's up to temp. I use a large charcoal chimney and a couple of splits to get a bed of coals. It also depends on how dry the wood is and what the weather conditions and how much meat you have in the CC. I don't know how many hours it'll take to cook them because it varies so much depending on size.

Would be almost impossible to make a close estimate there are so many variables; size of sticks, kind of wood, how smoker runs, etc. If I made a guess it would 20 - 30 4" splits.

If you use the Texas crutch it will reduce your cooking time. I would have about 50 lbs of wood before I began a brisket
