Charcoal. Maybe add wood chips for a little extra smoke ...
Skip the water for now - try it later after you get to know it better.

I like what Rick said, I would only add, fire it up long before you need it. This will allow you to see how well you can regulate the temps. I hope you are not a sound sleeper, this is not a UDS or one of Ricks all day and all night cookers. It is a RF offset my experience says you won't get much sleep.

Very well. I've made some mods to it. I built a pellet hopper cause I got tired of staying up all night tending fire!!! But I kept the option to do wood charcoal for daytime cooks. So basically my pellet hopper goes into the side of the firebox, underneath my wood cage.

Advice... I might have opted for an 80 gal tank. I just have enough room for a brisket and 1 butt. But sometimes I want 2 briskets Like when my sons football team came over.... So think about how much you want to cook and make sure the cook area is big enuf. I only have 1 rack in mine sitting about 3" off the reverse flow plate

2nd tip.... Plan out your wheels and support assembly better than I did... I wish I would have done air tires... And not the casters u see in my pics... I keep my pit in the garage and it's just a lil pain getting it in and out or wheeling it for long distance like say to the back patio etc...

Hey Manufacture Builder, start a thread, I too am doing a 60gal tank build (though my thread title says 40gal). I am still deciding if I want to do a RF or not.
