It's fine as long as you don't close it off so much that it affects the combustion in the FB. Sometimes I use my stack to choke the temps back and I've never had any flavor problems or had it be too smokey. I say do what works for you on your cooker.

I would say close the air intake more than you might think it should be before just passing it off. I say that because the stack lets the smoke out, if you limit the smoke going out you may find you food tends to be too smoky for some folks. Just don't stop trying things first.

My cook from the weekend, chicken wings a pork ribs. Tappecue was fantastic can't go wrong.

So far so good, have only done 4 cooks and no signs of discoloration. Even the fire box is good, i put in a double layer of material above the heat so the outside would remain shiny. Hope to keep it nice and sparkly.

My costco brisket Pics.
That was a big cook got the smoker going at 6.00 am then the Brisket in at 7.00 am, the cook took 11 hours the rested in esky for 1 hour.
It was a 8kg piece of brisket and when i trimmed it i lost almost 2kg of fat, it was a a very successful cook my guests enjoyed it so much
Will defiantly cook that again for $7.99 a kilo you can't go wrong .
I used Dry Rub OAKRIDGE BBQ Signature Edition Black OPS Brisket
