Yeah, & some people put a slight V bend that runs down the middle. Personally, I think that flat is better cause the BP radiates heat to make the CC even & I think bends & angles will counteract that(probably only very slightly, but that's enough to mess with my OCD, lol)
flat plate level front to back and left to right works every time and no where near as much work to build as those fancy BP's. Put a 2'' grease dam on the end with a 2'' drain and you'll be set.
I agree flat and level, if it's on a trailer you can cause the fat to move towards the drain after cooking while things are still hot just let the tongue down a little. But flat makes it very easy to clean.
