Hahaha right!
By the way, 2 other sizes should be coming out later this year. Bigger one and also a smaller one.

Do you have a completed picture of Mack? Trying to show my wife what's fixing to happen around here and the build pictures aren't doing it for her lol!

I've been eyeballing this build for quite a while now. Congrats on getting the plans released, I love the design. I know you're planning on releasing a smaller as well as a larger version later this year. I'm actually planning on building a smoker this summer to start doing more vendor/cater events. I think this design is just what I'm looking for, but I'm wanting to go larger. The CC with have 3 racks with a 4th available for shorter foods. The measurements I'm looking at are 60"x30"x30" for the CC and 30"x30"x30" for the FB.

After plugging my numbers into the calculator, I'm having trouble figuring out the opening measurement from the FB to the CC, which I believe you guys call the 'throat'. The calculator comes up with 216in^2 . Is there a good way to lay this out for the cut measurements? Also, I'm not really sure if how high the baffle plate needs to be off the bottom of the CC, or what the opening at the end of the baffle needs to be.

Any help would be greatly appreciated. Thanks!

I’m looking to build a smoker capable of much more capacity than I currently have. My current pit is a Pit Barrel Cooker. I’ve got a HeaterMeter on it and I’m happy with it, but it’s gotten a little small for some of my usage cases. I’m trying to decide between The Mack and one of the gravity feed smokers.

I like the ability to just set it and forget it with my PBC. Once the HeaterMeter has control of it, I can basically let her sit until the meat hits temperature. How often would I have to mess around with The Mack? I know it’s a stick burner, and I would have to add wood and stoke the fire sometimes. I’ve never used a stick burner but wouldn’t mind getting into one. Most of my cooks aren’t overnight though. I could just run the PBC when I want to do a brisket or butt for myself overnight.

I guess I’m asking for a little advice on the pros / cons of both. Mainly how much would I need to babysit this. Would it be able to be left alone for 3-4hrs? I think I would prefer a wood fired pit, flavor wise, but I’m not sure if it means having to tend to it every 30mins-1hr.

I’m waiting for the new plans Frank is getting ready to publish, but I’m thinking if it’s as big as the DP GF it’s going to be way more smoker than I need. My biggest cooks so far have been like 7 whole pork bellies for bacon. I had to do it in 3-4 separate cooks on the PBC. If I could get 10whole pork bellies or 5-6 briskets at once I would be happy size wise.

Thanks in advance.

Good questions.
On any reverse flow smoker you will need to tend the fire on a frequent basis. most of them are 45 minutes or so. especially a pit like Mack™.
The Gravity Feed smokers do not require tending a fire. mostly just clean the pit after each cook and your ready to go next time.

One thing to add....the controllers don't work too well (if at all) with a reverse flow setup. If you want a stick burner, you are going to tend it every 45 min on every cook. The mini/dp will run great with a controller.

Maybe the Mack for big cooks then a uds for your occasional overnight cooks?

I think best bet would be to build the large and small mack plus a gravity feed cooker or two. Best of both worlds

That's a ways out! May end up buying the big ones and scaling them down myself. Then again may not have the $$ to build one until spring anyway lol! Thanks for the updates Frank
