I would have to agree with RC, some smokers just don't want to run that low. My trailer rig will run about 190 but it's a struggle to keep it there with a clean burning fire. I haven't tried this yet but I thought that the next time I'm cooking I would cut some of the splits into fist size chunks and see if it would run a little cooler. I believe that it would work but you would have to keep a real close eye on it so it didn't burn out.

I’m willing to try anything now I’d hate to have to smoke all that sausage in my little electric smoker.

True that. Also keep in mind it can take a good amount of time to see a temp change in the cooking chamber. Especially when trying to go down in temp.

When cooking really low on a pit that likes it hot, I have found pretty good luck burning lump charcoal for the heat as it is easier to build a small fire. For smoke I keep tossing in kindling size splits that burn pretty fast but don't create much heat.

You could send the sausage to me and I would smoke it in my GF. I run 157-160 making jerky.

Ok now I’m having upper and lower temperature difference of about 50* is there a remedy for this or do I have to learn to deal with it? In the pic the top #s are top rack. Image

You could try a horizontal baffle, located above the area where the hot air enters the cooking chamber, slightly below the top cooking grate level. This forces the hot air to enter the cooking chamber at a lower point, rather than going straight up to the top of the CC. The added turbulence from the baffle will also mix the hot airflow from the RF channel more thoroughly with the still air sitting just above the RF plate, further aiding in even temps top to bottom.

I sometimes have good luck by slowly closing off my chiminey a bit...sometimes as much as half. It seems to level out the temp a bit in mine at least.
