I started a new job and work away from home now so I haven't been able to use my smoker until this weekend when we cooked up 5 racks of ribs and 2 spatchcocked chickens. I didn't have 6 hours to do the low and slow cook but was able to put out some fairly respectable ribs, chicken and beans in 4 hours.

If you were able to carry that flimsy foil pan full of beans from the smoker to the kitchen and not spill it, I guarantee you were below the 1 beer per hour cooking requirement. I call a do-over. And I'll be there for samples!

Just got laid off for a bit - permits for the pipeline I'm working on were delayed in Iowa so hopefully I'll get to do some more cooking before I head back to Keokuk, IA. I want to try some ATB's, wings and maybe a fatty...they all look pretty darn good so I'll be trolling for recipes soon - any suggestions are welcome.

Today was mod day for my build. I got a touch carried away when I built my basket and it didn't leave any room for an ash pan. It was so low that the ashes would pile up in the basket.

This is my starting point. You can see the line cut about 4 1/2" from the bottom.

Here is the finished product. I narrowed it up some to make room for preheating firewood too.

Tomorrow we'll try it out. I have 20 lbs of venison jerky to smoke along with some spare ribs, a chicken, some boudin and some alligator sausage that my nephew sent from Louisiana. Stay tuned for pictures!

The basket mod was a good move. I had troubles in the past keeping coal bed and a clean burn. Yesterday's cook was probably the cleanest burn I've ever had...now all I need to do is build and ash pan and we'll be all set.
