Seeing this is my first build I want to pick everyone brain before I go cutting up this cook chamber. Heres the layout of what I was thinking. The cook chamber to firebox opening is noted in white.

This is with all the racks in. I plan on making several slots for the larger racks so I can accommodate pretty much anything. I really want to get in that 4th top rack. My question is do you guys think the gap between the baffle plate (v- shaped, noted in black) would be too close to the bottom rack?

I used the calculator below to get an idea on measurements. Any input on how accurate these figures are? My only concern is the firebox to cook chamber opening. I can only cut it once!!

Not to get too far off topic. Talk about a long project, this is a few years in the making. Has a full kitchen with sinks, refrigeration, mixers, ect. up front and a 48" brick oven in the back.

Destroyr350 if you do pizza parties then we need to talk….

Could you do a thread of a pizza cook (not a whole party) to show us how it's done? I'm looking for a short cut method of making a respectable pizza alongside the "Q" that family and friends can eat because sometimes the "Q" is for someone else…. :D


And on the eighth day God created barbecue …. because he DOES love us and he wants us to be happy. :D

I could however I do not really know any "short cuts". I am very particular when it comes to pizza. Let me see if I can come up a with a recipe to share that would work for someone who doesn't have a brick oven. Most people have a propane grill, I have cooked many pizzas on my gill on a stone. Most home ovens don't get hot enough for my liking but that will do in a bind.

destroyr350 I completely understand being picky about my pizza but in this case it's something to appease the savages and distract them from the "Q" long enough to get it to it's rightful owner.

What I had in mind would probably have to be a deep-dish variant that a person can "imitate" a reasonably good pizza from a smoker running about 275F. A shallow pizza casserole?

By short cut I meant prebuilt dough, sauce, pre-grated cheese, etc. that most anybody can buy over the counter since we're usually too busy with the actual "Q" cook to make a big production out of it.

I figure this bunch can handle the pre-cooked meat prep - no problem. I just don't know how much of each ingredient and which seasonings. Everything I've tried from internet recipes is so mediocre…. :-B

And don't worry - we'll name it after you! :D

I had always thought about putting a 6-8" tall box on top of the firebox (kinda like a warming box but for pizza. Put it on a stone and rest it right on top of the firebox. Think that might work?

It would have to be at least 500 degrees in there to cook a pizza. You can make something like a bullet oven on top, It would need insulation and fire brick but you can do it.

Enough about pizza, making me hungry for it!! I made a little progress today, not much because it was very very cold. Cut the hole in the cook chamber and firebox. I also welded a flange onto the firebox that will go through the firebox shell and into the cook chamber.

Man everything looks really good so far. Can you share a few dimensions with me. I am getting ready to build a cooker similar in size. How high is the FB opening and what is the distance across or diameter? Is the insulated FB a must or just an upgrade? Pro's vs Cons? Did you cut through both at the same time for the opening?

Today is a big day, well at least I think it is. I finished up cutting the firebox and cook chamber and I also joined the firebox to the cook chamber.

What is the thickness of steel used for the cook chamber? U said that you only paid 200 bucks to have it rolled for you..did that include the other pieces you had cut too?

Everything is 10 gauge. I paid $850 for everything w/labor. Seeing there is 630lbs of cold rolled steel at $1 per lb that would make the labor $220 to roll the chamber and make all the cuts. In total there were 36 rectangular/square pieces and 2 laser cut rounds for the cook chamber ends.

Insulated Fireboxes are more efficient, I figure the added cost to build it insulated will be compensated by saving money on charcoal or wood. I did not cut the holes at the same time, would be really hard to do with the tools i have on hand
