I've smoked elk and venison, I would think buffalo would be somewhere between them and beef. My experience cooking them taught me to not overcook them. I'm typically a medium steak kind of guy but with wild game I go medium rare and have better results.
Well, it’s official...I now have a buffalo brisket in the freezer. Thought I would send this out again to see if anyone else has any suggestions to share on how to smoke it.
