I'm rebuilding a 200 gallon trailer mounted smoker another builder made for a guy who lives about 25 miles from my shop, it was built by a guy who's shop is only about 4 miles from mine. The owner has never really gotten to cook on it in 2 years!! The firebox was only 54% of needed, opening between cc and fbox in the center of the tank, door hinges mounted wrong,so no top seal, stack too small, mounted mid tank. he could only use the first 18 inches out of the firebox to cook in. There was so much creosote in the tank I was scared of having a house chimney type fire if I started cutting on it,plus the creosote was like concrete,we coulden't even scrape it with putty knives,so I had the inside of the cc sandblasted, and basically only using the tank itself and cooking grates for the rebuild.

Started by removing small round firebox, and having tank sandblasted, looks brand new inside now. Only thing done right was tank welded to trailer !! Having a bear of a time cutting it loose to raise it up for the new firebox to clear the ground, had to remove the fender and tire on one side for access to the angle iron welded from the tank to the trailer. the owner supplied the other builder the tank, and trailer for the build.

Still have the busted leg, so I do the heavy stuff on the weekends when my buddy who cooks the comps with me is at the shop. we cut the tank loose today, had to remove the fender and tire in the tank side to get to mounts the other guy put in, we set it on 8 inch blocks to hold it at the new height while we make new mounts, I already made the new firebox the right size,so it should be easy to finish it up.

Sounds like somebody spent a lot of time to build a poorly designed smoker.

Worst part was the owner supplied the tank and trailer, and the guy still charged him 2 Grand to build it, when it didn't cook the guy just kept telling him he wasen't making big enough fires. 2 years of frustration later we are basically starting over on it.

Small stack cut off
Yesterday my buddy was off for the 4th,so we went over the shop for a couple hours and got the tank in position for the new mounts, cut the old stack off,and cut the back of the trailer for the new firebox. it only had a 6 inch wide shelf across the front, and the crooked chain handle kept it from being used, I'm cutting it off to add 2 spring handles to match the firebox handle, I'll make a swing down shelf extension off the existing 6 inch wide shelf.

Great job! Is that smoke stack removable? Did you fire it up and test it?

Looks at a piece of meat and wonders how many ways can I smoke that.
