Got a fire going inside the new smoker at about noon today and after about 8 hrs of spraying the insides with veggie oil I threw on the first fatty. It's starting to smell wonderful in my neighborhood!!!

If it can't be smoked .... try frying it. It that don't work, it's probably best just left alone

BBQ is just smoke and beers!
Usually more beers than smoke.

The fatty in the pic was just a basic original...bacon, pork sausage, cheddar cheese, and sweet baby ray's...The one I made this morning for breakfast had all the same ingredients, but the addition of a broccoli and onion omelet.

The only disappointment with the smoker is the temp guages I bought from Home Depot are JUNK...So I ordered 3 therms from Tel-Tru.

And a friend on facebook sent me this pic of a "Redneck Turtle Fatty" that I am going to HAVE to try!!

Oh damn, I feel clogged arteries starting to form just looking at those!

So I swap out italian sausage for the filler and smoked sausage for the weenies and make the cheese optional (some of the cheese). Now that's healthy enough to justify trying a few right? :needfood: If I stop posting, you'll know I reached my Que limit! But it's been a good ride :D

Here's a pic of me on July 4th getting ready to unveil the new smoker at the weekly car show at my church:

Image

And here is what 157 lbs of pork butts look like that I cooked on the 4th before the car show:

Image

It was a slow car show due to a combination of mid 90's heat and it being a holiday, but this coming Wednesday should be a packed parking lot with temperatures expected in the low 80's.
