AJ,

I know you know that is a damper in the stack. But these boys are showing off their new plasma table. And you are calling them out right? Nice hinges too.

Need to find a big crew cab truck with a sleeper for that thing! Very nice, like the damper

R.C.... I needed to verify it was something that was actually functional and not just an ornament ( :D ). Now that you have verified it is indeed a thing of functional beauty I can rest easy at night knowing the boys are not wasting good steel on ornaments...

Very nice bit of retro styling there boys... well done indeed! :ymparty: :points: :kewl:

Here ya go! No paint yet but we did use it at the gathering. I’m very happy with the performance. Miketheforester and Pete Mazz did most of the work running the pit at the gathering. They can speak for their own experience. I expected the airflow pattern to either be an A pattern or an S pattern. Seems as though we had an S pattern and had a nice range of Temp zones.
Biggest observation is on the firebox end we are cooking from the top down with higher temps above grate level towards the top of the cook chamber and lower at the grate.
In the middle of the pit the same Temp from top to bottom but a slightly lower grate Temp.
At the stack end Temp is higher under the grate and lower going upward.
These can be helpful when cooking a wide range of food and styles on the pit during the same cook.
The pit does get to Temp on the thermometer within 15 minutes but the pit seems to take 3 hours to completely equalize Temp due to the 3/8 plate and overall mass of the cooker.
Another note is she seems to just sip the wood. Very efficient.
You can control the pit 3 ways.
Fire size
Stack damper
Air inlet.
Finding a balance of all 3 is key to cooking in this style pit.
Overall I love it! Definitely not a pit for a beginner tho.

It definitely looks like there was plenty of food to go around!! Was Lou Ann the only cooker there ? Not that you would need another one.

Mac was there, as well as a couple UDS's. The pic of me pushing Lou Anne onto the flatbed is a joke of course! That beast comes in ~5000 lbs.

The top down heat is definitely different. Meats are one thing but casseroles suffer a bit. Upper racks would totally take care of that. Mike had her running at 450 (at the thermometer, midway up) for a while. I think he was keeping it there with 2 splits every half hour. When we first lit her up in the morning, she got to 250 in minutes and the FB still had frost on it! Gotta love insulated FBs.

It does work great. The racks on the inside look like a football field and 3 briskets on it look like pork chops.

I might be interested but you would need to throw in the gooseneck as well!

Just kidding, it’s a bit overkill for a patio model.

Beautiful work! Can I ask you guys.. what are dimensions of 1000 gallon tank in US?

1000 g = 3700 liters for me (Czech Republic, Europe)

So far I found tanks with diameter 50" (125cm), but I think that is too much (looking for 40").

Wow, that is simply incredible. This is definitely more than I need to feed my family. Is there a paint job in the future or keeping the rustic look?

Hey man, that turned out great! Good thing you had extra capable hands willing to help out. I really like the design on the firebox, I am going to do something similar on my next one. One question I have is placement of the chimney. You put this real low, why? Does it help balance the temperature difference from top to bottom?
