Started working on getting the racks knocked out.... Next up is exhaust stack.... Question, calculations are showing 36" for a 6" stack. Can i make it longer or will that change flow to much?

Follow the calculator, it will make for a proper running pit.

Secondly, why in the world would you want a longer stack....it just adds weight and looks goofy!

It can be a little longer, just put a damper on it in case you need to slow the draft.

Thinking forward to the trailer part of this build. Thinking just a simple single axle out of 2x4 11g... Will that be sufficient strength?

That should be fine. I normally use 2x3 for my trailer builds and haven't had any problems.
