There's a local pork BBQ competition coming up in about 2 weeks actually 12 days. I've never done anything like this before but everybody loves the way my barbecue taste. The competition is cooking six 6 to 8 pound pork butts. There's a set turning time for the judges, I have never really concerned myself with how long it takes to cook. it's done when it's done and most people don't care because they're drunk. I usually smoke at about 225 to 250 so can some of you guys give me an approximate cook time/rest time. I was thinking of somewhere between 6 to 8 hours cook and then 30 minutes to an hour rest. I'm not sure if I want to jump into this because it's right around the corner and I don't have a cook team set up or anything. By the way it's only a $150 to enter and that covers the cost of the pork. There is no selling of any product you can give free samples of about one oz per sample. As far as judging it's a 2 oz sample per judge and it can be prepared anyway chopped, pulled or sliced. I usually shoot for a 200゚ internal temperature so it's tender enough to fall off the bone.

I run at 275 and it takes about 7 hours for bone in butts.

I find pork butts very forgiving. You can wrap them and turn the temp up a bit to speed them up or let them sit in the warmer for an hour so you have a lot of adjustability. When I plan a meal, shoot for having meat ready an hour before serving time because something always increases the cook time, lol. It can always "rest" a bit longer if needed but serving late is not something I like to do.

I was just reading the rules for this cook and it says that the people's choice starts at 8 am. Then it says that all voting tickets must be turned in by 12:30 PM so I so I guess you're gonna have a receptacle of some type on your table where people put their ticket if they vote for you. Then it goes on to say that the celebrity judges will be presented with samples of your product. It's very vague about when you turn in for the celebrity judge. That's a long time to keep your sample in a warmer / Cooler. Winners are going to be announced at 1 PM. I've got so many questions for these people.

Well I didn't do too bad for my 1st competition I took 4th place in celebrity judging and 5th place and people's choice. Celebrity judging I got a small cutting board and people's choice I took $40 get certificates.

Thanks guys I went into it with the mindset that it's all about having fun and that's what I had. I did notice a quite a bit of changes that I wanted to make to the tank. One thing for sure the burner kept blowing out and I had to relite it. I know propane but that's all I could do with this before I got laid off so many years ago when I built it and I've just never changed it. I need to make a cover for the end of my pipe burners because the wind played havoc on me. And I want to do a slide out smoking chip tray. But don't think too bad of me. I've got a 120 gallon in the works.I just need to go pick up the tank, best of all it's free. Now just to decide if I want an offset or a reverse flow.
