Open Items Before Purchasing Plans

I have two items that are pending for me before pulling the trigger on a new gravity smoker:

1). Does the double pan smoker work well for things like ring bolangna, summer sausage and snack sticks. It looks awesome for brisket and shoulder but I’m concerned about the “hanging” meats working out well.
2). Does the new plans have a way to get cables into the smoker without going under the door seal. I’d like to have something that looks a little more finished once I am done.
3). I’m excited!

1. Works for everything. I have yet to do it, but I bet $1000 you can bake bread in the thing and it would be the best bread ever.
2. You can put a pass through in for probe wires. I dont think its worth the trouble but you might.
3. You should get excited and pull the trigger.

It’s metal. Any hanging system can be fabricated and any type of pass thru could be made. I used athreased pipe nipple...can thread on a cap if I don’t need it.

:yth: I used nutserts (large 12mm ones). Put a bolt in when you don't need it.

This. Replace the top rack with a frame built for hooks (maybe arched to to gain a couple of inches of hanging space,) and take the lower racks out. Now you have the best of both worlds.

As far as the pass-through goes, I took an extra piece of square tubing, and welded it in between the cook chamber and the pocket I built for my HeaterMeter. I drilled holes big enough for high-temp silicon pass through plugs from Weber, so there's a pretty effective double ended seal on. Works quite well.

I installed a tube to route my cables through. I just couldn't make myself run them through the door seal and running them down the chimney was a pain. Image

It smokes everything great!!

Bread, baskets, tarts, brownies, cakes, cobblers, and the list goes on. I run the same cabinet with a pellet hopper at home. It’s the easy button. But I faithfully cook brownies every dang time I smoke.

As mentioned the top rack could easily be modified to have a lot of stuff. Could even still use the bottom rack to support a drip pan.

The prob port..... again as mentioned there are many options. I like to use a 3/4 inch pipe nipple.

Just did one for chad buckles and he wanted it drilled thru the roof, back right corner to allow the wires to miss the racks. Welded inside and out, and gets a cap when not in use. Doesn’t really need to be sealed during a cook since there is already a 4 inch hole right next to it.

It may be worth checking out the double pan diy kit.

WHAT!!!!!!!!! I want to know more. Box brownies mix can cook aat 250? How long does it take?
