My Gravity Feed, Double Pan Smoker Build

Post by Alman » August 28th, 2017, 4:02 am

So I got my designs of Gravity Feed, Double Pan Smoker Plans from http://smokerplans.net and had a go.

Below are some of my pictures.

Everything went well except I have the juices/oil from the meat leaking at the bottom.

How can I prevent this?

What do you mean juices leaking at the bottom? You should have a drain in the bottom of the cook chamber that will allow you to drain the fat/juices out from the bottom when it gets a tad full. If it is leaking at the seams them there is a problem with the welding.
You should have a ball valve on the drain from the cook chamber, make sure the valve is closed during cooking.

Learning generally boils down to "Repetition or the avoidance of pain", some people learn by doing, some by watching and some just have to pee on the electric fence.

Whether you think that you can, or that you can't, you are usually right. Henry Ford

I didn't put a drain at the bottom .... I don't recall a drain in the plans.
So when the door is opened the fat/juices drip

Would like to see examples of the drains that have been done

I have to agree with AJ, also it looks like you haven't put the dam across the front of the CC

This is the drain on my mini, it's pretty much the same as the DP & the last pic is the dam

I just noticed that you haven't got the drip rail on the inside of the door either. :?

Why is your chimney so small?

Thanks to @BBQChris and @ajfoxy for the feedback I will adjust accordingly.

On the chimney, it works fine and I never open fully anyway. Is there a reason for it to be larger in diameter?

your missing (plate B) on drawing CCA and CCP. This would solve that even with a tin foil pan under it

The stack size doesn't really matter that much on a vertical smoker, as long as it doesn't restrict flow too much it will be all good :kewl:

I tell you what though, it Smokes much much better than my Kamodo Joe Big even before I rectify the drip rail.

I also find the Flame Boss 300 much easier and friendlier to use than the BBQ Guru Cyber CyberQ but the Pit Probe stopped working after on the 2nd smoke. I hope they will cover it with warranty.

Just my thoughts so far .... thanks to all onhttp://www.smokerbuilder.com and to http://www.smokerplans.net and to @fulbore & @squiggle for adding their advice.

Now apart from putting a dam in (as per Squiggle's pic) as well as a drain hole with ball valve on the other end (outside). You also need to put a drip deflector on the door (as per squiggle's pic). This ensures the fat does not drip down the door and over the seal etc.
And the door should be closed during cooking. Only open to check/baste/admire or take out.

They are awesome units, just set & forget! :kewl:

I have to go with the CyberQ, I can whack the food in the smoker & then go to work while watching it ( & adjusting if necessary) from my phone, food is ready when I get home(with a little help from the missus wrapping)

The instructions that come with it are pretty simple, but I just linked it to a static ip address in my router & then set up a host site from a free hosting website(like the ones you would use for a web based security camera) with an automatic login to the ip on my router, but when I'm at home I can just open the ip address directly through the router. :kewl:
