Went to order my tubing yesterday and was told by the 2 local shops that neither could get 16 gauge steel due to the market? Only 14 gauge. Looking for any thoughts on why I shouldn’t or should go this way. Do you think it will add a lot more weight? Or would it be negligible?

It'll add a bit more weight. Plan your wheels well. The cheaper pneumatic casters from TSC are a hassle. I'd recommend some lawn tractor tires.

Luckily I already overdid the wheels. Ordered the ones off McMaster. Cost twice as much as the tubing. Thanks for the response.

The difference in weight is 0.63 pounds per square foot of sheet steel....add a bit more weight but not too bad.

I would consider 14 ga for the tubing and sheeting, much easier to weld and little cost difference.
