my cold smoker project

here is the cold smoker i put together. saw this cold smoke generator, smoke pistol brand... though i'd give it a try.
it has a variable speed air pump, that works pretty good. they try to sell you these cardboard tube reservoirs full of pellets.

for the price of a 3 pack of pellet tubes, i got a whole sack. there are a few things i dont like about the set up. the air inlet is on the bottom, so as the pellets burn, the ash residue clogs the incoming air. and the outlet nipple comes right out of the side of the housing, so it gets clogged with goop also. there is a 1/4" mesh screen in there, but it doesnt hold back the ash residue. i can get most of a day out of it before it needs to be cleaned out.

the variable speed sounded cool when i bought it, but i just leave it turn up all the way.

i will probably keep the control/air pump box and rig up a new burn chamber out of 2" pipe nipples.

i set this up with an air tank i got from the scrap pile at work.

i have done several batches of cheese, some salmon, and some salted pork belly pieces.... been working good so far

here it is on the first test run. puts out plenty of smoke.

when i redo the burn chamber, i am thinking of adapting it to my 60 gallon patio rig.

i put in a half inch pipe nipple as a drain for the baffle plate. so if i rig up some pipe fittings.i can pump the smoke right into the main cc. right under the grates.

if that works, i dont need another tank to take up space.

While taking a break from the steel smoker, I had planed a plank of maple and in less than 3/32" of shaving the top I had enough of this to pack the entire pellet tray

i gotta quit trying to reinvent the wheel. so i was thinking i might want to cold smoke my bacon project to get more smoke time before i bring it up to temp...

it occurred to me that i should simply do this.

drill a hole.

now my cold smoker generator fits my 60 gallon smoker. plenty of smoke.

one of these days, when i can find 2" black iron pipe nipples, i'll build a better smoker generator. for now i put a sink drain screen down above the air inlet, and it is much better, doesn't clog up like it used to.

That is funny DC. "Nipples" in this context is short piece of pipe that has been threaded on both ends. We can always count on you DC.
