Awesome stuff Puff, I've been smoking some cheese & found it definitely needs a bit of time to mellow out the taste. Going to whack in some more today, I'm thinking of rolling it in sweet chilli sauce & cover it in ground cashews.
Squiggle, I made the very eclectic whiskey barrel for cold smoking and it came out great. In 2 yrs I've smoked about 45 lbs of cheeses and got 100% lucky good results. While waiting for this arm to get better I figured ...what the heck ...let's try it. Took 5 hours but looks good.
I vacuum seal it and wait at least 3 weeks for the age process. Some are 1 year old and taste FANTASTIC,! If they don't age and mellow out....it's like licking an ashtray

Good info....I smoked cheese a few years ago and it was so strong I thought I screw up. Ate a few slices and pitched it. Never knew the secret was to let it sit and mellow for a while.
