Fraternal Twins

I started a pair of insulated direct water smokers that I've been working on the design for a month, it's time. These are optimized as much as possible. The interior of the box and the interior of the door is 1\8", (1 - 4 x 8 sheet). The exterior will be 1\16", (1 - 4 x 8 sheet)
The ash pan will be a standard 3" full size pan, the water pan will be a 4' full size pan. Both will be removable without disturbing the cooking chamber.
the coal basket will be 7' tall, 13" wide and 20" deep.
The top will be 1\8" aluminum diamond plate to be used as a shelf.
The insulation will be 1" ceramic 2300 degree.
It will have 3 full depth racks and 4 half depth racks.
I finished both frames, 1 has the back and 1 has 3 sides on it. I will pick up more material Wednesday.
This should make a great competition smoker or a backyard, set it and forget it, until suppertime.
My overall goal is to lighten the load and improve efficiency for competition.
The advantages will be to gain some experience cooking on something that is not a stick burner, but most of all I will have 2 more smokers.

The side shelf with the propane bottle will be going away. I found this last night and I am going to give it a try. (Less is more)

Looks good, but I would eliminate the water feature. I've built tons of cookers both with and without water and found no advantage having a water pan. Everything I build today is waterless.

I disagree with poultry. I use my water pan on turkeys and chicken and have found favorable results.
It will be removable without effecting the cook chamber. If nothing else it will serve as a drip pan.

That's the great thing about building and using cookers. We all have different results and ways of cooking.

im with clover ridge on the no water pan, ive done chicken as well and noticed no diferance with or with out, much like beer can chicken, didnt notice any differance

This is my first insulated pit.
The charcoal basket is 12 x 19 x 6 1\2 tall
Question....
Should I add a maze to the basket?

Made some progress today.
I will build the door tomorrow, but I cannot put the back on until the insulation makes it here next week.

You could add a maze if you go with 5.5" X 6.5" hallways leaving a full 1" gap between the 2 hallways. It would burn down 19" and back 19". Should give you several hours burn time. :D


And on the eighth day God created barbecue …. because he DOES love us and he wants us to be happy. :D

Still waiting on the insulation to finish the top door.
i decided to go with a maze in the charcoal basket.
Hopefully this weekend this one will get seasoned.
Meanwhile, I will turn my attention to the twin. The shelf will be on the opposite side.

The smoker is painted and the red in the bottom of the picture is the bottom door. I got an update on my insulation, it will not be here until Monday.

I got my insulation in today.
I finished the top door and hung the bottom door while the top one is drying. I will hang it and finally build a fire.
