The day I have been working for.
Added a 15 lb bag of charcoal with no water pan at 6:50 am.
She is still at 290 with the air valve only opened 25%.
I looked at the coal before I came in and it seems to still have well over half. I will monitor it until I go to bed and we will see where she is in the morning.
Tomorrow evening, is ribs.
Thursday is chicken.
Pork butt on Friday.
Saturday give it a break.
Sunday Brisket.

Update:
I overcooked 2 racks of ribs and dried out some chicken. (No waterpan)
I have a new test cook planned for tomorrow.
3 racks St. Louis
2 racks of Baby Backs
Halfed chicken
15 legs
Baked Beans
Bacon wrapped green beans.

Modifications:
I added another 1 1\4" valve for even faster recovery if needed.
Ripped off the stainless piano hinge and threw it in the scrap pile. Went back with weld on bullet hinges with Zirc fitting.
The biggest change was removing the maze. K.A.M. I should have listened! Not necessary and impeding in a sealed environment.

Max temp with the maze and 1 valve was 300, I want the capability of 375. I will never use it, but I do not want to be limited to 300.

I have been fighting Photobucket for 3 days. I will post more pictures as soon as I figure out why I keep getting "Upload Failed".

This will also serve as a cook on trailer in in-climate conditions.

Really nice job on both the smoker and the trailer. Does the step on the right side retract or slide off? Or, does it possibly fold up?

The trailer frame was from my 2000 Starcraft Popup. The step slides under the trailer.
I put metal on the back, just in case any ashes where to fall out.
The trailer box is 82" wide and 106" long.
GVW is 2700 lbs. That will be more than enough for what I will use it for.
I am going to build a 4ft x 4ft bifold ramp.

Twin 1 is being used by some friends of mine who cook a lot more competitions than me.
They have higher brisket scores than they ever have. The last 2 competitions was a 5th over all and then a 4th overall.
They have a competition this weekend then Twin 1 comes back to the shop for a stainless face lift and a few modifications to match Twin 2. Then it's 1st KCBS Oct. 4th.

I am waiting on my new casters to come in and a couple touch up items. I hope to season next week then it will be busy. Pulled pork for 70, then 20 lbs of BBQ wings then its maiden competition will be Oct. 18th.
In case you are wondering Clyde Morrison was John Waynes father.

Our second year cooking bbq and we took 107 out of 562 ....doesn't take years....just a good pit and team members....
