Babybacks and Mac & Cheese

For what may be the last cook before winter sets in, we stoked up the 80 gallon RF, and did dry rubbed babybacks, and smoked mac & cheese. It didn't suck! Really love cooking on a stick burner. The ribs were nothing revolutionary, just standard dry rubbed ribs, using the 3-2-1 method at an average of about 250F. They were excellent! The mac & cheese was another matter....it was awesome! Wife did a 4 cheese blend of cheddar, gouda, fontina, and pecorino. Put it in the smoker for the last hour and a half. Topped with some browned panko bread crumbs. I know I may get banned for this, but totally forgot to take photos! :o

They say a picture is worth a thousand words. So, to help you out, feel free to share the Mac and cheeze recipe. Im on the hunt for a new one and yours sounds perfect. Im even willing to count up the words for you and see if the guys will give you credit!

Happy to 'tires! We based it on the following recipe, and then doctored it up with some cooked bacon that was chopped up in a food processor(about a cup). Then, put it in a disposable aluminum pan and smoked it, rather than bake in the oven. Took about an hour. It is very good, and will definitely be a repeat!

Many thanks...fits the bill for what I’m looking for. My current recipe requires me to stove top cook the cheese sauce and is not real easy to cook ahead. I’ll definitely try it.

And guys....I stopped counting at 2319 words on the recipe. I vote he gets credit for 2 and a half pictures and certified that “it happened.” After all, rules were meant to be broken!

Mmmm not too sure DT, but if you are willing to vouch for the "happening" then I guess it could have happened. Of course photographic proof the supplied recipe is genuine will be required on your part... :D
