Snack sticks in my mini

Gonna give snack sticks a shot using my mini. Heat source will be a two burner hot plate , smoke will be supplied by pellet tray and will utilize temperature control fan for air movement. Currently set at 100*F and will bump up to 160* F in an hour. Eventually I'd like to experiment with a divider to reduce firebox volume to facilitate a smaller clean burning fire with less heat for making lower temperature goods.

Turned out pretty decent for for first attempt, flavor and texture are spot on but casings are a bit tough.

I think it’s great that you’re thinking outside the box of what you can do with the GF. Most guys only use them as designed and miss out on all kinds of opportunities. Those snack sticks look great!

Did you put them in an ice water bath right after smoking?

I didn't do the ice water, may do it in the future to see how it effects the finished product.

I do it every time. It shrinks the casing down and gives it a little snappier bite. Usually let them bathe for 10 minutes or so then hang in the fridge overnight. Then vac seal the next day.
