Got into curing and smoking bacon some time back. I will never have to buy bacon again here are some pics

on the cooker smoking with pecan and hickory, is there anything else. Wish I could try some fruitty wood but do not have any

you know you want some, don't tell that lie HA HA acouple of the slabs, the smaller ones is wild hog. Me and Tyler made some traps and my brother has caught over 40 on our farm. It is covered up, we use it for sausage also. the bigger the hog the better it is, the boars are great.

I smoked it at a lower temp today, to try and not render as much fat out.... The wild hog was OFF THE CHART!!!!!!!!!!!

Do you have a commercial slicer?


If it can't be smoked .... try frying it. It that don't work, it's probably best just left alone

Yes solo, we have all the processing equipment at my familys farm. We do wild hogs and deer all the time

I am telling you guys it aint like store bought, I can not make enough of it. It does not curl up and go away it sits there and cooks no more wearing my welding coat while cooking bacon and of course there is plenty of drippings for seasoning my vegetables

looks like it turned out killer!!! i like using peach and apple woods when i do bacon but you can never go wrong with pecan and hickory

Definetly has it's perks. Anytime I want to run some practice cooks, she will hook me up so my :hissy: "maybe not such a good idea" :hissy: cooks don't cost an arm and a leg. :D

Tell you what guys I am going to do some more real soon and I promise I will take pics and go through the entire process
once i start curing it takes about 7 to 10 days to complete it including the smoking process. I have done around 200#s in the last few months and people beg me for it. Just done some wild hog from our farm and it was better than the domesticated hog got it vacuum sealed for my brother who will be coming home soon
