So like I posted earlier, I seem to be making friends hand over fist but I'm sticking to my guns. This is NOT a drop off BBQ service, you can bring your cooler full off whatever you want smoked and we will shoot the bull while the smoke puffs away. WELLLL, I might be turning a new page to my rules. A buddy of mine showed up with 4 slabs and a butt just as Pops was settling in to temp. I told him to pull up a chair and get comfortable but he kind of reminded me it was way too hot to hang around a smoker for 5 hours. MAN DID I GET TICKED! Just about when I was gonna tell him where he could shove them slabs he gave me this crazy grin and told me he had a peace offering for not sticking around. From out of the igloo cooler came a frosty cold quart mason jar of some seriously clear amber liquid. I was informed that is was Apple Pie Moonshine! Maybe you have heard of this stuff, just maybe you've been lucky enough to taste some. I will smoke whatever this guy drops off until further notice if a jar of this stuff accompanies the igloo cooler each time. I've sipped through about 8 ounces and probably need to remember to check on the smoker or write down the instructions for the wife! :D

Those pieces on the top left are the tasters, the trimmings that are good to nibble on while everything else takes a bit longer.

if i were a drinken man, that would be a pretty good trade,,,, didnt know moonshine was still made... i traded a pork shoulder last week for 5 gallons of homemade icecream,,,,,, we were ice cream drunk for a week lol.......... :oopssign:

One of the many interesting things about Alabama, you never really know what is still going on until you venture back into the woods a bit. :kewl:
Scary part to this stuff is that you can drink it like Apple Cider, It's when the smoker starts moving across the yard that you might not be drinking cider. But home-made ice cream would be a pretty good barter too. At least then I could drive to the store during a cook! :D

Vacuum sealed for another day. :kewl: First time I did this I figured I was ruining things for sure. Could not have been more wrong. Something about the vacuum process, really pulls in the flavor. They make great stocking stuffers at christmas :D

SQ, the Q looks fantastic!, now about the Apple pie!, a mate of mine from Athens AL, bring a good supply of Gatorade 8-x to our get togethers and boy is the good stuff!, I must ask him if he`s heard of Apple pie!! :D

Food looks great! A guy I know well may or may not make some that apple pie, man is that stuff good!

You've got nicer friends than I do, Solo. One of my cousins used to show up with coolers full of meat and tell me he'd do all the work, all I had to do was keep fire in the box. Then he turns around and tells his wife and another of my cousins that my BBQ tastes like shat! He ruined that for pretty much everybody... ~x(

Ended up with the Holiday off so I figured I would empty out part of the freezer.

4 butts, about a dozen cornish hens and my buddy dropped off a turkey breast

Butts are around 150 so time to foil and grab a pic. Hopefully everything will come off at once ... yeah right ! :D

3 hours on the smoke and a few minutes rolling across the grill rack to sear up the skin. This rack is just a temporary until the grill grates arrive so it wasn't seasoned enough to not tear the skin. They ended up so tender the legs were falling off as I rolled them. :kewl: Crazy how a 3 hour brine makes these hens so juicy. Not so much greasy but really juicy. Could be my favorite meat off of the smoker, not even gonna break out the sauce tonight!
The butts are foiled and resting in a cooler, I got a pan of Smokehouse beans on the top rack along with a couple dozen wings finishing up, been a fun day

Everclear Apple Pie
1 1/2 gal apple cider
1/2 gal apple juice
2 cups suger
9 cinnamon sticks
add all ingrents together in large pot and let simmer for about 2 hrs.
let cool to room temp. then add one bottle of "grain alc" everclear.
:beer: :beer: :beer: :beer: it's going to be a party up in here
