Looks great. I'm not a big jalapeno guy so I've never done these, but every time I see them I think wow those look good.

made some more today and damn they were good, well these were actually poppers I filled with italian sausage bacon and cheddar, smoked them standing up in a bowl on the uds

I'm not huge on Japs either. That's why their stuffed with cream cheese, pulled pork, and wrapped in bacon. Did I mention they are wrapped in bacon?

I usually don't wrap mine in bacon. But what I do use is Chorizo sausage in the stuffing that I buy from a Mexican market in Detroit. I buy the jalepenos there as well as they usually have unusually large ones which make for easier stuffing. I sautee the sausage with onions and then let it cool a bit before I add it to a package of cheddar, a package of cream cheese, aand a couple handfuls of chopped cilantro.

My wife doesn't like japelenos, but after I'm done stuffing the chiles she'll take the leftover fillig, heat it in the microwave, and use it as a chip dip.


Pulling my pork....200 lbs at a time!!
