brined for 14 hours ( brown sugar, salt, booze, sage, rosemary) scored skin, rubbed yellow mustard, garlic, onion powder an a wee bit of "squeal" from Oklahoma Joe's. put on Frank Cox's UDS at 6 am. lump, briquettes, mesquite. target UDS temp 235 ( jumpin' all over- wrapped UDS in moving blanket, Target meat trmp 150 then rest- me and meat- "that's what she said")

thanks not much sleep but alot of fun!- kinda on a whim and horse-assin' it. I'm trying to decide if I should rub homemade blackberry jam on it at the end or blast the heat to crisp the skin for a psuedo-cracklings effect.

Hey there Yancey, not sure what happened, I was checking the board all day from my phone and I was only getting updates on the threads that I posted on yesterday. I was watching for yours.

I just wasnt feeling great today ... never could warm up. Maybe had something to do with the fact that it didnt get over 18 till late afternoon.

So how did it taste. ??? I am guessing that it must have been pretty good,

Wow that was nice. I was thinking that blanket might get burned up though. My cooker is 5/16 inch thick, it wouldn't even know a blanket was on it.


Current Smokers: Backyard RF Offset and Hybrid RF Offset trailer rig with Cowboy cooker and fish fryer, always room for more........
