Grinding and smoking sausage by TQ and Tyler

Well it was time to grind meat so we did it this past weekend. We mad bacon burger from bacon I had smoke and cured, we made regular hamburger, we mad breakfast sausage from wild hog and boston butt, and we made summer sausage with Jalapeno and cheese. It was awesome!!!!! AC legg is the best seasoning made and yep it is Made In Alabama ain't none any better in my opinion



My Co-worker big Red and my wife Sharon. Her hair is growing back she started her radiation today 5 weeks of it everyday but The chemo is over!!!!!!!

In the smoker at 200 degrees for 5 hrs until 152 degrees internally and Know I did not render one drop of fat out that is the key

Ice water bath till 115 degrees internally

Then let them bloom for a while, it has know effect on quality but they will take on a deeper mahogoney color


the finished product!!!! Yep it was spot on!!!!

got tired of looking at sausage and made mamma some stir fry for supper.... Cause when Mamma is happy TQ is happy!!!!! You know what I am talking about now don't cha!!!!!!!!

The wife is looking great. Sure glad things turned out the way they did for you guys. Power of prayer brother.

My compadres and I have been talking about doing a sausage fest ourselves. We're looking for recipes right now but have mostly agreed on smoked kielbasa of some sort. Any idea where to start looking?

Thanks guys and Yall can get most anything I got!!!!!!! but my sausage NO NO NO!!!!!!! If you were close buy Yall could get all you want!!! I think DC is on a bacon diet tho. Rick you are more than welcome to live next door but you r gonna here a lot of beating, banging, and, grinding!!!!!!

Yep Tyler was under his welding hood the whole time. Amazing how when we were done he pops up and says Dad I want to try some of that meat. LOL!!!!!
