Rubs and suaces.

So what are all of your favorite rubs and sauces for all your Q? My current (and loyal) favorite for sauces is anything by Denny Mike's. I tend to like sauces with out a bunch of garbage in it (corn syrup and other things I cant pronounce). For rubs so far I would have to go with Texas BBQ rub's Grand champion rub. Don't have a lot of time with rubs though. Let's hear what you all use. :grillin:

Jethro1, we make our own rubs for beef, pork and chicken as well as our own sauce. We have been working on it for about a year for competition.
The only commercial rub we use is BigRon's he has three rubs that work well with just about any meat. His sauce he just came out with is awesome as well.

I prefer to make my own rubs. sometimes i will start with someone elses for a base and then modify it.
for a brisket rub to use at home or for non competition smokes I like to use the one in the traeger cookbook....
  • Ingredients:
  • 1 - 10 lb. whole brisket
  • 3 T. Traeger Beef Shake
  • 1/4 c. salt
  • 2 T. fresh black pepper
  • 1 T. cumin
  • 1 T. allspice
  • 2 T. paprika
  • 1 T. garlic powder
for a good pork rub for non-comp smokes I like to use Eman's rub and add some extra ground red pepper....

The rub:
  • 1/4 cup hungarian or spanish paprika
  • 1/4 cup onion powder
  • 1/4 cup garlic powder
  • 1/4 cup cbp
  • 2 tsp celery seed
  • 2 tsp ground mustard
  • 2 tsp cumin
  • 1 tsp nutmeg
  • 1 1/4 cup dark brown sugar.
it helps to get the lumps out if you run this thru a grinder or food processer.

Man you guys are hard core!!! I just started making sauces. Fun playing around with it. I have been growing some of the world's hottest peppers for a number of years now (why, cause I'm an idiot) and I have hot sauces down pretty good but this BBQ sauce thing has been a challenge, but fun. Love the learning process. Jethro from Maine. :grillin:
