20 slabs are on ole Pops today, Christmas presents for family and friends. Oh sure it leads to new customers throughout the year but it's the thought that counts right :kewl:

I'll vacumm pack and freeze 16 of them to carry North for Christmas

Ah...how north is north? SoloQue, you passin' thru Ocean county by any chance? Actually, I didn't know that you would freeze them..when you re-heat them, is it just in the oven?

You can re-heat in the oven no problem. Let the ribs thaw out in the frig a few days then transfer to a pan I use a shallow roaster that has a rack. Pour in 1/4 cup of liquid I do apple juice or cola, seldom just water. Tightly seal with aluminum foil. Set oven to 300 and run for 1 hour. Usually you can start to smell the ribs after 45 minutes which is a good sign that they are almost ready.

You can also reheat in a microwave if time is short. Make sure ribs are thawed adnd place entire (sealed) vac pack bag in microwave. Using ONLY 1 minute cycles srat warming up the pouch. When the bag starts to expand you are almost done. Now run 2 cycles at 30 seconds. The bag should almost be ready to pop probably, then set aside 3 - 5 minutes to allow final warm up to stabalize a bit.

I also vacuum seal all my food. I just throw whatever is vacuum sealed right in a pot of water and bring it to a boil. Let it boil for a few minutes, and pull the bag out of the water. Cut it open and serve. Nice and hot and doesn't lose its moisture or tenderness.
