New Years Eve Cook at the Cave

Well I Smoked 2 Butts and 3 small packs of Baby backs. Put the Butts on yesterday at about 3:30 and the ribs around 4:30. Let it rip at about 200~225 and at 7:30 had some ribs. then at 11:45 the Butts were at 195 internal. Pulled them out to rest till 3:00 am. pulled the Butts and today its time to eat up.

I Snoked the ribs for 2 hrs on the smpker and into tho oven at 225 to finish covered with foil.

After 4 hrs the Butts went into the oven to finish in a large pan covered with foil.

I have a hard time getting the temps consistant on the CharGriller and the oven is consistant.

Pulled Pork is done. I dont mix and Sauce in because I like to tast the Meat and Smoke.
