Carne Asada recipe

OK so my wife (like everyone elses Im sure) likes mexican food the best. Our favorite dish is 'street' style tacos..2 white corn tortillas, meat, cilantro, and onion. Add a homeaid salsa, and were happy.

Problem is, I haven't found a good marinade recipe that blows me away yet for making them myself. I made them last night, and while good...they had room for improvement IMO.

I used:
2-lime (freshly squeezed)
1-orange (freshly squeezed)
kosher salt
ground black pepper
1/2 cup olive oil
2tbsp white vinegar
freshly chopped cilantro
1-chopped chipotle pepper in adobe sauce

This made for a good dinner....but it could be better. Any suggestions?

u need to add cumin and red chile powder,
some like it better with out lime marinade, and use some bitter oranges, or tangelos, they work better, but a little bit of orange, not alot

Are our wives related? Since she discovered that Diet Coke Lime... I have to buy it for her all the time. Lime on everything.

Lime Salsa Chips, Lime Wheat thins, Lime Chicken, Key Lime Pie, I guess the good thing is no scurvy to worry about :o

LMAO, yeah I hate asking her what she wants for dinner. Her auto-response is:
Tacos
Burritos from that gas station by your work.

I prefer my street taco's sans lime, but she will use half a lime on each one. ugh.

Gimma a few days ill get ya a great carne asada recipe. My sister lives in NM, thats all they cook out there. The food is crazy good, even better when kissed with smoke!

Carne Adovada

1/3 c. peanut or vegetable oil
3-1/2 lbs. pork loin or butt, cut in 3/4-inch cubes
2 c. diced onion
2 T. minced garlic
4 c. chicken broth or water
2 t. ground coriander seed
2 t. dried Mexican oregano
2 t. chile caribe
3/4 c. Chimayo ground red chile, mild or medium
1 T. red chile honey
2 T. Sherry vinegar or red wine vinegar
salt to taste

Preheat the oven to 350°.

Heat the oil in a large skillet and brown pork in batches. Set the pork aside. Add the onion to skillet and sauté until golden. Add the garlic and sauté for 1 minute. Deglaze the skillet with 1 c. of the chicken broth, loosening the browned bits with a spoon.

Place the coriander, oregano, chile caribe, red chile, honey, vinegar and salt in the workbowl of a food processor. Add the cooked onions, garlic and broth from the skillet and 2 more c. of chicken broth. Process until the mixture is thoroughly combined.

Place the browned pork, the chile marinade and the remaining 1 c. chicken broth in an ovenproof pot or dish, stir to combine well, and cook for 1 hour or until the pork is tender.

Serves 8

Optional seasonings: ground canela, ground cumin seed, toasted ground chile seeds, toasted ground pumpkin seeds.

Note: This dish reheats wonderfully and is better the next day.

Note: The traditional method for making this dish is to mix the marinade ingredients together and pour this over the meat. Cover the mixture and refrigerate overnight. Pour the meat and the marinade into an ovenproof casserole or pot and bake, covered, for 2 to 2-1/2 hours, or until tender. The method described above, although not so traditional, brings out the flavors of the onion, garlic and pork because the ingredients are caramelized or browned first. Whichever method you choose, the dish is full of flavor and will be a favorite. You can serve the Carne Adovada over chile rellenos, rice, wrapped in a flour tortilla as a burrito, or with beans and posole

I also wont pretend i make this every time. If i am lazy, i reach for a package of desert garden spice mix. Its pretty dang close. I never tried it without NM ingredients, but i def believe their chile's taste different. Sure it is still good without the NM ingredients....but i would highly suggest picking up some of their chile powder.

What do you mean by "carne asada"? It has different meanings in different regions. Down here is south Texas by the border for most people it means meat (mostly beef fajitas and beef ribs) cooked directly over live mesquite coals or charcoal. Some taquerias call it that even when cooked on the hot plate or the gas grill in the restaurant. Also it is traditionally just seasoned with a basic seasonall, no marinade.

I basically want to make the wife street tacos. When I go to TJ, I always stop off at taco carts and love the tacos. Found a place in KC that makes them pretty similar, so I take her there and she loved em.

We went to a few Mexican grocery stores around here, and you can usually buy thin cut beef (flank) marinated in an orangish color sauce with onions and cilantro. It seems to make the best tacos, so Im trying to emulate it. SInce I don't speak spanish, I have trouble asking them what they are using to marinade.

These recipes will make you a red sauce. If ur looking for something easy, order a few of them dry seasonings from desert garden. Getcha some NM chili powder if u make chili too! U wont regret that order
