Pork Picnic Shoulder

I prefer the boston butt over the picnic but the price was right, so I went with the picnic. I put it on at 7:30 this morning for what I figure will be about an 8 hour cook at 225 and then between 1 and 2 hour rest period, to eat around 5:00 to 5:30, Is a 8 1/2 lb picnic shoulder, pic 2 hours in while putting a mop sauce on every hour to help keep moist.

To get to Wyoming, do I turn right at Virginia? That picture just looks so good I can smell the pork cooking from 1500 miles away :needfood:

Thanks guys, turned out with great flavor and awesome tenderness, just pulled away so easy. Smoked for 8 hours and then rested for 2 hours, total time of 10 hours. Pic is after letting it rest before putting any sauce on it. The picnic does have a different flavor profile then the boston butt, the picnic does kind taste like ham in it's own way. They say the picnic is also a tuffer meat then the boston butt, but I got it very tender.The family was raving over it. What I learned, was a tad bit saltier then I would have liked being picky, after thinking about it, I think what made it a little saltier then I like is it was not fresh so it is injected with a salt solution when it was packaged then my injection has salt in it, should have cut salt down in my injection or cut it out all together. That is being picky but I think we all pick are own BBQ apart, what makes us better.
