Naked Fattie!

If you're like me, making a bacon weave to roll up around a fattie is just too tedious. I prefer to pre-cook the bacon and crumble it inside with all the other goodies. Problem is, there is nothing to keep the fattie from falling apart on the smoker. I made a couple over the weekend and had an idea. I have an old French bread pan that I rarely use. It's the perfect size to hold a fattie and it's perforated so the smoke can get to the bottom and the fat can escape.

I didn't get a shot of them cooking but here's the finished product.

I also don't roll them like a pinwheel but prefer to just meet the top edges and seal. These have sauteed peppers, onions and mushrooms with a 3 cheese blend and, of course, the diced bacon. The other benefit of not having raw meat rolled inside is you just need to cook it until outside is how you want it done and not have to worry about getting the inside to 165.
