This Can't Be Good

The Church of Christ contacted me and asked that I cook for them tonight for their bible study group. No problem, would love to. They asked for pulled pork for 30.

I out in 14 (2 butts) pounds of pork but at 9:11 AM. I was running just a tad behind getting the smoker lit and the food on (had to do my paying job) but I knew I would be OK, just would end up crammed for time. Well the temps haven't been rising as in my notebook from previous cooks. Didn't think too much about it until I did the math on when I have to have this delivered, in 3 hours!!!!!!!!!!!!!!!!!!

I finally figured out why I am so screwed here. My old gauge was reading 25 degrees low. So, when I was doing pork butt at 250-275, I was actually cooking at 275-300. I was using the same target temp of 250-275 today, but have been hanging around 255 for most of the cook.

Current temp is 173 and I have them wrapped in foil. Bumped cooker temp to 300F. I have to leave here in exactly 3 hours with this. Tell me it's going to make it!

LOL. But my practice and notes were based off gauges found to be 25 degrees hotter than they read!

I'm a nervous wreck lol.

If the current temperature of the butt is 173°… Get it till 185 internal Temp then put it in a cooler wrapped in towels and in foil… And let it sit until your there and right before you have serve it to pull it… You should be good

That is kinda the plan. I usually pull around 200F (by thermapen) and rest for at least an hour in heavy beach towels, then pull.

It's possible to get away with 185 and rest 1 hour wrapped in foil and towels and in a cambro or cooler....but that is cutting it close.... So the higher the internal temp the better but 185 minimally…
And tell us how it turns out..., And remember… No pictures never happened…

Sorry, late getting the pics. I was really disappointed how these turned out. I had to rush them the last couple hours and only was able to rest for about 40 minutes. Lesson learned!

I did receive a call last night and the lady who ordered it said everyone raved about it. I guess they were OK with it, just wish they could have tasted what I normally cook.

My wife says I'm my toughest critic. You probably knocked their socks off even if you personally thought the Q was below par.


If it can't be smoked .... try frying it. It that don't work, it's probably best just left alone

My wife tells me the same thing. She says everytime I cook for someone all I do is complain about it's missing this or that. She told me last night she doesn't know why I do it haha.

The juices redistribute in much less than 40 minutes. Rest time was just fine.
