Chicken Rub Shootout

Post by Gizmo » May 18th, 2014, 7:54 am

When I have a few minutes I will often cruise the intraweb thingy and look for new rub/sauce/"Q" recipes.
After a few months I accumulate a few I think are worth trying. So I figure it's worth the time/fuel to find out.
This time it happens to be 5 different chicken rubs

So here's 5 weber drip pans (they were cheap) sprayed down with vegetable oil (I already had some). I wrote the name of the 5 rubs on the end with a sharpy. The rub samples I mixed up are lined up against the wall behind the pans (recycled shaker jars)

Cast of characters:

New
Brick
Foul
Jerk
Island

I put the rub on chicken drummies (4# frozen for $12 at Walmart) last night before bed in 5 different labeled baggies.
I put a different flavor per the lables in each pan and into the Easybake…..

We'll see in about an hour who wins out of these 5:
I would be happy with just 1 …. :D

And on the eighth day God created barbecue …. because he DOES love us and he wants us to be happy. :D
Current smokers: Egor (trailered RF) and Easybake (tabletop pellet drive)

All ready for sampling …..

The 3 to the left of the pepper mill are regular rubs.
The 2 to the right of the pepper mill are both Jamaican.

And the 2 winners are ……. (drum roll)

FOUL AND JERK!

(the carnage)

Which means nothing to you because you weren't here to try them.
So I'll explain briefly.

The FOUL rub is one of mine I've worked on about 2 years now. Just like to have it face off against other would-be rivals as recipe's come along. It's a general purpose succulent chicken rub that just keeps getting better.

The JERK rub, as you probably guessed, is an island rub with the usual Jamaican flavors and a long fuse. It's gonna be great on wings and quarters for something different. I'm really glad to have found this one because we have a marinade that takes 14 hours and about 20 ingredients to make it - many of which have to be hand cut and blended to come out right. This rub does a very good imitation of that stuff with a fraction of the work.

Thanks for tuning in ….. :D

Damn you Rick! Don't you know you're supposed to just throw stuff together and try to remember what you did when it tastes amazing!!!

Chicken and ribs tonight for me. Tried a new injection. Don't ask....

That's the way my wife does it Pete. She made the best turkey stew "ONCE" and tried a bunch of times since without hitting the mark. She hates a recipe.

Looks good Gizmo! Can't wait to try these out.

BBQ is just smoke and beers!
Usually more beers than smoke.
